Recipe: Easy Summer Lunch

I am not sure if this qualifies as a recipe, but I am constantly looking for lunch ideas, that are easily made and able to carry with me to the library. Since I came up with this tasty mix last week, I thought I share it with you today. And maybe you were still looking for some inspiration for today’s lunch.

Here is what you’ll need:

  • Tomatoes
  • Rocket
  • Tomato paste
  • Feta cheese
  • Ebly – you can also use couscous, rice, quinoa…
  • Spring onion
  • Spices

What do do:

Cook Ebly as advised on the package. While it is cooking, cut the spring onions, tomatoes, feta cheese and rocket leaves.  When the Ebly is ready, drain the water and let it cool. Take the hot pot, add some olive oil and the spring onions. After a bit, add in the Ebly, tomatoes, feta cheese and tomato paste. Stir it all and add your desired spices, such as salt, pepper and maybe some fresh parsley. At the end add the fresh rocket. Et voilà. Enjoy your super quick lunch!
