Recipe – Coconut Cupcakes

Anyone craving a sweet summery treat? I can only recommend those Coconut Cupcakes to you. They are easy to make, not so sweet and taste delicious. Even next to the raspberry cupcakes , I showed you last week, they made an impression at the girls night. The ingredients differ not that much from the others so you can easily make them in one row. Interested? Here comes the recipe!


Ingredients for 6 cupcakes

For the dough:

  • 65g soft butter
  • 80g sugar
  • 1 egg
  • 90g flour
  • 1 teaspoon baking powder
  • 20g finely grounded coconut flakes
  • 60ml milk

For the cream:

  • 75g powdered sugar
  • 30g finely grounded coconut flakes
  • 100g mascarpone
  • 100ml whipped cream

Preheat the oven to 160°C and prepare your muffin tray. Start by mixing the soft butter and the sugar. Add the egg, flour, baking powder and milk. I usually add one part of the flour with one part of the milk to avoid dust, when adding the flour. Stir until you get a smooth dough and mix in the coconut flakes. Fill the dough into six of the muffin forms. Bake the muffins for around 30min.



While you are waiting for your muffins to get ready you can already start preparing the cream. For that simply mix all the listed ingredients, apart from coconut flakes, together until you get a smooth cream. Then mix in the flakes. When ready, take the muffins out of the oven and let them cool down for 15min. As with the raspberry cupcakes get creative and decorate the muffins with the cream as you desire. Now there is only one thing to do – Invite some friends, brew some coffee and enjoy the taste!
